Hong Kong is Cantonese in language and in kitchen, and the food culture is the most accessible way into it. Yum cha — dim sum with tea, taken late morning, noisy and communal — is a weekly family fixture rather than a tourist meal.

The cha chaan teng is the everyday institution: a fast, cheap café serving milk tea brewed through a cloth sock, pineapple buns, macaroni soup and Hong Kong-style French toast — a hybrid cuisine that exists nowhere else.

Feng shui is taken seriously in building design, not as decoration: the gap through one harbourfront tower and the placement of escalators in major buildings were both feng shui decisions.
